I love it and hope to make more next year. I also have a few pints of the berry pulp in the freezer for midwinter juice.Sandrahttps://www.blogger.com/profile/08810788367419537003noreply@blogger.comtag:blogger.com,1999:blog-7789865586418282697.post-63733776537180349312012-12-04T13:51:44.752-05:002012-12-04T13:51:44.752-05:00Canning wins: 52 quarts of dill pickles - let me t...Canning wins: 52 quarts of dill pickles - let me tell you the ones I threw a jalapeno in with are zippy! 6 pints of pickled garlic, because my family doesn't think 6 cloves in a quart of pickles is enough. Dilly beans for the first time (mainly because I don't like them.) 15 quarts of pickled beets. Beet jelly. tomato soup. spaghetti sauce. strawberry rhubarb jam. wild grape jelly. crab apple jelly. pickled crab apples. pickled peaches. pickled pears. cranberry apply cherry spiced preserve.

canning fails: the batch of salsa that just wouldn't get thick, so I added perma-flo (the Amish ladies by us swear by it and I use it on sauce all the time.) Yeah, salsa with the mouth feel of jello - not a good thing. I'm going to end up using it on roasts or something. canned pumpkin (shudder - gross, going to stick with the freezer for my cooked squash/pumpkin)

(Just a safety note here. Do I recommend trying a made up recipe for canning - no, but I also have a degree in food science, so I do a little bit of food science math with my amounts - and there is nothing wrong with substitutions as long as you keep your acidity/sugar levels the same.)Traci Sumnerhttps://www.blogger.com/profile/03871204933123385197noreply@blogger.comtag:blogger.com,1999:blog-7789865586418282697.post-42643117724513974092012-12-04T12:49:45.840-05:002012-12-04T12:49:45.840-05:00I have that t-shirt, and wear it proudly.I have that t-shirt, and wear it proudly.Susanhttps://www.blogger.com/profile/12573143203599624833noreply@blogger.comtag:blogger.com,1999:blog-7789865586418282697.post-15342217619767312882012-12-04T12:21:17.550-05:002012-12-04T12:21:17.550-05:00I have that t-shirt! I will do most of it in pints of stew...our version of "fast food" Then a few pints for other recipes. Beef and noodles anyone? Have a great day!Heavens Door Acreshttps://www.blogger.com/profile/12614854227889527035noreply@blogger.com
