What do you do with all of your eggplants? The only thing I could think of to preserve them was to bread them and freeze them for eggplant parmesan in the winter...

Hi Tiny Gardener! what Dave said below..and yep i froze a bunch of the eggplant for quick and easy parmesan. You said it, Dave! the parm was amazing - the goat cheese and fresh basil was incredible.
