Sooo, you run a chop shop! I love pork chops and pork roast. It always tastes SO good! You sure work well as a team!
Your "pig in a post" was very interesting reading. It looks like it was a very good job performed.
We go back and forth with the feasiblity of raising our own. We've done it several times in the past and always butcher them ourselves (however we do take the hams and bacon to the locker to be smoked and cured). That said, with the price of corn, I'm just not sure it would be feasible to do it. Other than that wonderful knowledge of knowing what it ate and all that, I'm sure we couldn't buy a feeder pig and feed him up to 275 lbs or so for anywhere near what we can but one already fat for.
But yes mam, that is LOVELY pork!!
Super expensive for feed here in Alaska... it comes to about $2 a lb, if we do all the processing ourselves. Still mulling it
We had pork tonight as well, but sadly, not home grown. It looks delicious. Almost as yummy as Tknag Hooves or Heart of Targ (Pg 2)! I dare you!

Anxiously standing by for your tips and tricks! I know of course feeding milk and we would attempt to pasture the bugger, but not sure how long that would last before I was having mini chops..........

I love to hate them pigs, Ms Ginny! I just went and checked them in the freezer and gave them a loving pat... they are best this way.
