The Great Beet Crisis of 2013

This is it. The very last jar of my home canned beets.


I'll soon be beetless. Then what? Wandering around aimlessly looking for some kind of beet substitute? It won't be the same.

I love beets and I don't care who knows it. I love everything about beets. The greens. The beets themselves. Watching them grow.... they are perfect. Easy to grow, multi-purpose, and lovely.

Lately I've been eating them in a salad with a lot of homemade ranch dressing, iceberg lettuce, and black pepper. Today will probably be my last beet salad. Dang.

Come on... where is that spring?

Oh well. Looks like I'll have Complicated Pastry Day Part Two. Yesterday's Part One was epic. I dominated the first day of making both croissant and puff pastry dough. I hope it works out. I'll need to drown my beetless sorrows in complicated pastries.

Ran out of my apple cranberry cherry spread. It was good out of the jar, on roast (esp. pork!) on cheese. Sigh.

And because last year was a crap year for apples, we had been saving, hoarding, not letting the children know we had.

Darn kids opened it when we had company - guess hiding behind the big bag of brown sugar that was behind the extra flour on an upper shelf wasn't enough. And it's not like I could run screaming to the table and defend it with my life and scream, "Mine, mine, all mine." (I thought about it, though!)

I was hoping for a complicated, butter filled, 128 layer "how-to" this morning, but I suppose the sorrow of your lack of beets won out this time.

I planted sugar beets instead of regular beets by mistake. So I havent had beets all year. :( Its been a long, long year.

Traci, i would have LOVED to see that! ha! i think the last jar of anything is so sad.

hey Carolyn! can you believe its a TWO DAY process? i'm so excited. i rolled out the croissants earlier and am waiting for them to rise. pix and info this weekend for sure.

Kristen, i've been saving my last jar of B&B's.... so sad...

hey SFG, did you feed those sugar beets to your barnyard crew? beets are one of those great multipurpose crops - the greens and the beets are good for livestock. and yep its a long year when you are beetless.

I love beets also, but never seem to cook them. My mother used to make them a lot!

I just finished my last jar of homemade turkey broth. I guess it's time to cook a turkey again- fortunately, not season dependent.

Last jar of onion relish... man that stuff is great on burgers. We'd make burgers just so we could have some relish...

We had a sad little crop of beets last year. Very sad indeed. Hoping this year will be better. Our go-to variety is the Detroit.

Oh man! I love beets too! There is a great little Amish store in Johnstown, and they have THE BEST pickled beets I have ever eaten. Having never pickled them myself (yet) I rely on them for my beet addiction. They are sooooo good... I mean I will eat them until I throw up. I am not sure how close you are to Johnstown, but I rely on my Momma to supply me my beets as I am 2 hours away, and she is only 20 minutes.
