Easy bake emergency chocolate cake
While it was a great emergency chocolate fix neither of us thought that the texture was quite right. So I monkeyed around with the original recipe and came up with an easy baked version.
My inspiration was from Steamy Kitchen's 10 minute shrimp curry recipe. Even tho I wasn't making this fabulous dish with shrimp nor did it take 10 minutes, it did leave me with about half a can of coconut milk...which would be perfect for...
OFG's Easy Bake Emergency Chocolate Cake
Preheat oven to 350* and then find and grease the smallest cake pan you have - this worked perfectly in a 6" pan
Melt in a medium sized, microwave safe bowl:
6 Tbls of butter
Then mix into the butter:
8 Tbls flour
4 Tbls sugar
4 Tbls cocoa
It won't all mix in but at least you won't cook your eggs with the hot butter, so now add:
1 large egg (or two very small pullet eggs)
4 Tbls coconut milk
A big splash of vanilla
A big handful of chocolate chips
Pour into your prepared baking pan and bake for about 20 minutes at 350* or until it starts to crack a bit on top. The texture is pretty fudgy so it's kinda more brownie-like. And its best served warm with a huge scoop of ice cream. Or for breakfast.
Now go and put on your favorite snuggle socks, put your feet up by the fire, and have yourself some chocolate cake!
yummie! Thanks for sharing this recipe. I think that i am going to follow your advice and make this and enjoy it : )
Life looks too good! It must be Heaven :o) Ginny
Lets see, you won't trade a piece of that for a cat so now my only option is to beg the good wife to make me some. "Oh honey, you really should come take a look at this recipe. It's got chocolate in the ingredients."
Ha!, shes coming.:)
I love the idea of emergency cake.
That picture looks good enough to make you want to take a bite out of it! The recipe is easy enough. I'll have to try it.
I don't know... first slothing and then slothing WITH chocolate cake... What's with all that hard farm work? I'd try the recipe out if I wasn't several decades behind on the technology department. I've never quite worked out how a microwave worked, hence I never owned one either, so I just have to come for a surprise visit and you can whip one up for me.
hi Peri! Yumm... hope you got some chocolatey goodness!
Life is good, Ginny - especially with cake!
Mr. H - no more cats! HA! hope you got some cake. btw, i'm sure once kitten season hits will be swimming in kittens. there's not much spay and neutering in our county. good thing we are on the job, we even get a discount from the vet for the feral cats we bring in.
Hi Nancy! There is no emergency that cake doesnt solve in one way or another.
hey VPak! quit biting my computer screen! hee hee hee hee
Heiko, Brother! Slothing with cake is the best. Come right on over and I'll fix you one up!
