Bacon's here....

I'm sorry but I can't talk to any of you right now.... the bacon is here. I'm sitting in my kitchen surrounded by 90 pounds of bacon and ham just back from being smoked and cured at the butcher.

Best. Day. Ever.

I think I'm on my 3rd "BLT"... Its a miracle that I even have lettuce in the house. Lately I've been on my own "modified Adkins" (meat, coffee, and donuts). But I figured I needed to have some kind of vegetative matter so at the store the other day I grabbed an overpriced head of lettuce and swore I'd grow my own from now on.
This ham slab didn't even fit in my biggest skillet.

At least I didn't buy a store tomato, I just popped open one of my home canned pints of thick 'mater sauce. A schmear of "T" on one side, an unholy amount of Miracle Whip on the other, an obligatory lettuce leaf....and all the bacony goodness that piece of bread can handle.

Me home alone... with all this bacon....

Carry on without me friends, I think I have room for BLT#4.

So jealous, that looks absolutely delicious!!! I would be in a bacon frenzy with all those sweet, sweet packages of bacon...

And of course you are saving all that bacon grease? My mouth is watering!! We won't get bacon until mid-January, no one will take ours so close to the holidays. I'm seriously jealous! Good thing you have four big dogs guarding all that bacon...but I doubt anyone would get past you, either way, with that axe of yours....*snicker*

okay, two questions (for now hehe), have you made blood sausage and have you made crispy pigs ears? Gotta ask, I am a huge fan of Anthony Bourdain and Andrew Zimmeran and they both rave about using all different piggy parts. Ok, 3rd question (knew there would be more) what about pigs feet? I am about using every part possible, including intestines for sausages. :o)

hey Tracey! great questions:

1. blood sausage - nope
2. ears - nope
3. trotters - nope

mostly for the same reasons. There is a lot of work involved in getting the hair off the ears and trotters - so it just isnt worth it. As for the blood sausage... I have to say, its not my thing. And... it figure the hennies can do the clean up.
