Sunrise Over the Potato Harvest

No time to talk - more potato digging and canning for me today! I can barely keep up.


But wow what a sunrise!

Canner going full time here too! Or should be if I can get myself into gear to deal with the heap of meat and veg which need putting into jars! Nice to know that someone else on this planet is also engaged with the canning saga. Vx

I hope to have room to grow potatoes someday soon. Our yard and garden are oh-so-tiny! I have a fantastically prolific paste tomato plant which I used for some Mary Janes Farm tomato jam this past weekend. Unfortunately it didn't "jam up" and I'm going to be recanning again this weekend. But it tastes yummy!

It all evens out. I slept in. Well actually I didn't sleep in. I laid bed and debated the rational of actually getting out of bed in the morning and going to work. I did this for two hours until my wife noted that the coffee was getting cold.

Why do you can your potatoes and not store them as is? Just wondering :)

hey Tracy! i can them because i dont have a great place to store them. we have a mostly finished basement so no "cellar" to put them in. and with a dog nicknamed "Digger" (Kai!) we cant really do a rootceller like thing. plus once they are canned they are superquick to use. if i'm tired or in a hurry they are the quickest supper or breakfast to make.
